薑黃素 (Curcumin)是咖哩中的薑黃的黃色素,在動物實驗中被證實可以預防心臟肥大,心臟肥大會增加心臟病的風險。 Histone acetylation 在心臟肥大中扮演關鍵的地位。薑黃素 (Curcumin) 可以抑制 Histone acetylation,也抑制了心臟肥大。研究人員以老鼠做實驗,證實薑黃素 (Curcumin) 可以預防且逆轉心臟肥大。薑黃素 (Curcumin) 也減少發炎及纖維化。 另外一篇老鼠的研究中,薑黃素對高血壓的心臟病及手術導致的心肌梗塞,有防止心臟衰竭的效果。
